Poached shrimp and calamari tossed with as much lemon juice, garlic and fresh herbs as you like plus a whisper of Calabrian chili — bright, lean and full of protein. Serve it chilled alongside a cool pour of High Ridge Noble for a carefree Italian summer, Smoky-Mountain style.

You'll Need

  • 1 pound mixed seafood (shrimp & calamari)
  • Lemon juice, garlic & fresh parsley
  • Extra-virgin olive oil
  • A pinch of Calabrian chili flakes
  • Celery & red onion, thinly sliced

A truly native vine

Muscadines are pure Southeast — their native range runs from central Florida north to Delaware and west into Texas, with Tennessee right in the thick of it. They sprawl through the Tennessee River basin and climb the sunlit foothills around Gatlinburg and Sevierville, where locals have harvested wild and cultivated Muscadines to make mountain wines for generations. Black bears forage them every summer too — our bear just prefers his bottled.
